TravelBound is a specialist Tour Operator that deals with travel for predominately schools groups.
We are currently looking to recruit a Head Chef at the Chateau du Molay, situated in the beautiful countryside of Normandy. The chateau offers accommodation for up to 200 people in 40+ rooms as well as a number of meeting rooms, a library, a games room, a lounge area and bar.
The purpose of this role is to ensure the profitable day to day operation of the kitchen to company standards. Responsibilities include:
- To train/coach and provide guidance for your team and to be responsible along with the General Manager for managing and enhancing their performance.
- To motivate and supervise all those working in the kitchen.
- To ensure meals are provided within the confines of a budget set by the Company.
- Control operating costs through sensible energy management.
- To provide all meals (breakfast, lunch and dinner) in accordance with company guidelines.
- To ensure high standards of preparation, presentation and quality of food.
- To provide a balanced menu for staff each day.
- Establish food requirements and order all foodstuffs, through the hotel manager, avoiding surpluses and shortages of products.
Applicants are required to have previous experience of catering on a large scale preferrably within a position of responsibility i.e. Head Chef/Chef de Partie. As well as an NVQ Level 2 (or equivalent) in Food Hygiene.
